RAW SHRIMP, CUCUMBER, GRAPEFRUIT AND VERBENA
Raw shrimp, shrimp oil, raw cucumber, grapefruit gel, lemon verbena and mint

CURED PLAICE, SNOW PEAS AND PICKLED GREEN STRAWBERRIES
Plaice cured with kelp, this summer's pickled green strawberries, lemon thyme and sugar snaps

BLUE MUSSELS, LEEK, WATERCRESS AND CREAM
Lightly steamed blue mussels with watercress oil and lemon, watercress, mussel sauce reduced with cream 

GRILLED LAMB RIB, TOMATO AND TROUT ROE
Icelandic lamb ribs, rubbed with dried tomato, mushrooms and spice, slow cooked, grilled and served with cherry tomato confit, raw tomato, tomato powder, tomato gel and trout roe

HALIBUT, ENOKI, ROCK CRAB, LARDO AND LOVAGE
Pan-roasted Icelandic halibut with lardo and lovage, grilled enoki mushroom, rock crab consommé

BEEF TENDERLOIN, CELERIAC, HORSERADISH AND SMOKED BEEF JUS
Slow-cooked eef tenderloin then blackened, whole herb-baked celeriac, purée of the celeriac zest, beef jus with smoked butter, fresh horseradish and horseradish snow

STRAWBERRY “NOSTRA”
Fresh strawberries from Kvistar, raw strawberry sorbet, grilled strawberry sabayonne frozen with Liquid Nitrogen and liquerice  root

CHOCOLATE FUDGE AND BURNED ROSEMARY
Chocolate bar, cacao, burned rosemary milk ice cream, candied rosemary
